RESEARCH EXPERIENCE
Research Assistant (Jan 2023 - Nov 2023)
- Worked on projects focused on rheological tests to understand physical properties of plant protein extrudates and wheat flour doughs.
- Responsible for acquiring the Food Grade Certification for one of the University’s laboratories.
- Performed data analysis and helped tailoring manuscripts for publication.
Skills: - Kieffer apparatus
- Rapid Visco Analyser
- Mixograph
Master’s project - University of Manitoba (2019-2022)
- Worked on wheat flour dough rheological measurements in order to evaluate the strength of doughs prepared from wheat samples containing a wide range of free asparagine concentration.
- Learned low-intensity ultrasound and applied this method as novel technique for dough mechanical properties evaluation. Additionally, a standard operating procedure (SOP) was developed for the ultrasonic experiments.
- Performed statistical analyzes to study the relationship between wheat free asparagine content and gluten strength, as measured by empirical rheology, shear rheology and low-intensity ultrasound tests.
Skills: - Empirical rheology: Branbender Farinograph, Brabender Extensograph, and Mixograph.
- Fundamental rheology: Linear Oscillatory Frequency and Time Sweep, Creep-Recovery, Stress Relaxation, and Low-Intensity Ultrasound.
- Statistical analysis: OriginPro, JMP, and Excel.
